Alain Parodi has been appointed consultant Chef at the Hotel Royal-Riviera alongside Bruno Le Bolch , who has directed the kitchens of Le Panorama since 1999, which has now been rechristened "La Table du Royal". Alain Parodi is a former 1-star Michelin chef at Le Cigalon in Valbonne - which he ran from 1996 to the end of 2009.
By creating this culinary team, hotel General Manager, Bruno Mercadal has decided to combine a more open approach with continuity. "I wanted to open up the restaurant to the outside so that it is no longer thought of as just a "hotel restaurant", to make it more accessible and clearly identifiable. I know the credentials of these two professionals, and the way in which they complement each other is a guarantee of success. Alain Parodi’s gastronomic vision for the restaurant is to introduce a more contemporary style to the cuisine and he will create the menus, while Bruno Le Bolch will orchestrate their execution."
